Chocolate and Viet Nam

Changes are proposed in the FDA standards for what can be labelled as "chocolate.” The proposed new standards would allow 100% of the cocoa butter in chocolate to be replaced by vegetable fats. Cocoa butter is crucial to the melting properties, texture, and taste of chocolate.

So long as there's so much power and money to be gained by those who control chocolate, eternal vigilance will remain the price of chocolate purity. Go here to let the FDA know that you don't want to allow vegetable oils in chocolate.
